Nutrition Standards

Maschio’s works closely with schools and districts to reflect their unique needs and culture, while ensuring they remain compliant with required nutrition standards. All schools which participate in the National School Lunch and/or School Breakfast programs must follow the Healthy, Hunger-Free Kids Act of 2010 guidelines (including Smart Snacks in Schools standards) set forth by the US Department of Agriculture. Our dietitians review menus using “NutriKids” nutrition analysis software to ensure they are meeting appropriate grade level nutrition standards.

Summary of the Healthy, Hunger-Free Kids Act of 2010 Guidelines

The new lunch meal pattern and nutrition standards went into effect September 2012, which are in alignment with the Dietary Guidelines for Americans. There are now four required grade groups with specific requirements for each meal component.

Minimum and Maximum Calories Weekly Average for a 5-Day Week:

  • K-5: 550-650 calories
  • K-8: 600-650 calories
  • 6-8: 600-700 calories
  • 9-12: 750-850 calories

Saturated Fat (% of total Calories): < 10% for each Grade Group

Trans Fat: 0 grams per serving

Vegetable Subgroups: Dark Green (Romaine, Spinach), Red/Orange (Tomatoes, Carrots, Sweet Potatoes), Beans/Peas (Black Beans, Chickpeas), Starchy (Corn, Potatoes) & Other (Celery, Cucumbers) must be served in specific portion sizes each week

Dairy: Milk must be 1% unflavored, fat free flavored or unflavored

Grains: All grains served in schools must be 51% whole grain rich

Summary of Smart Snacks in Schools Guidelines

Any Food Sold in Schools Must:

  • Be a “whole grain-rich” grain product; or
  • Have as the first ingredient a fruit, a vegetable, a dairy product, or a protein food; or be a combination food that contains at least ¼ cup of fruit and/or vegetable; or
  • Contain 10% of the Daily Value (DV) of one of the nutrients of public health concern in the 2010 Dietary Guidelines for Americans (calcium, potassium, vitamin D, or dietary fiber) through July 1, 2016

Nutrient Requirements:

Calorie limits:

  • Snack items: ≤ 200 calories
  • Entrée items: ≤ 350 calories

Sodium limits:

  • Snack items: ≤ 230 mg (After July 1, 2016 snack items must contain <200mg sodium)
  • Entrée items: ≤ 480 mg

Fat limits:

  • Total fat: ≤35% of calories
  • Saturated fat: < 10% of calories
  • Trans fat: zero grams

Sugar limit: ≤ 35% of weight from total sugars in food
